Flipping heck all I said was in my opinion chip shop chips were always undercooked!Heston bloominheck experimented on ways to dry out chips to get the perfect texture & taste, microwaving didn’t work so after much experimentation he discovered that triple cooking produced the perfect chip, this involves slowly simmering, then freezing followed by deep frying twice (or summat like that) you want perfect chips go to a restaurant, you want fast food go to a chippy
