FFS mate be clear from the start the other person is responsible for their actions and your losses so its up to them to sort it out with no monetary loss to you it really is that simple when you cut through the bullshit
Dont let them take the bike until you are happy with the settlement, they have no right to despite what they may tell you, if you want to keep it and repair yourself tell them that now and stick to it then negotiate the price and remember they will lie at every turn in order to give you the minimum they can and the more companies involved the worse it is for you as they all want a piece of the pie
Again do not let them take your bike for any reason until you are weighed in fully, i worked in the repair industry for a short while and the practices are poor bordering on theft at times I really cant stress this enough ! any repairs they do will be sub standard without a doubt so if you keep it and cant repair yourself then get it done at a shop of your choice at their cost (you will need 3 quotes)
If they do write it off and you let them remove it make sure you are paid first or it will take months (if they are slack recovering what will have become their property then tell them you will be charging them storage)
Lastly never accept the first offer you want the amount it will cost to replace like for like, same condition and very similar mileage even down to if it was a 2 owner bike then that what you want so start looking at adds for similar birds (expensive ones) and save them as proof that it will cost you x amount to replace like for like
