Make sure you take your original docs with you keep them safe (and some photocopies handy), most 'foreign' police always want to see docs on the spot if you have the misfortune of being stopped.
As for legal requirements they vary from country to country, have a look at the RAC/AA websites they both have sections on what is required although not everything required of a car is necessary on a bike!

You are not wrong you are correct, you must carry bulbs and all your doc's at all times, i took a high viz just to be on the safe side. The EHICS can be ordered on line, its quicker , but remember if you have one it has an expiry date on it so check it before you leave.

Other than that keep right and have a great time

And do watch your speeding thru the tunnels....got done in the Mont Blanc tunnel week before last...bang to rights...perfect picture of me and the wife on the bike doing just 7kph over....22 euro tunnel entry and a 45 euro fine by the Italian police the other side....oh and they do require all originals of your documents.....As for the bulb kits, warning triangles, high viz etc...seems to be more relevant in France than elsewhere.

Hi viz is for you and passenger, so take two if carrying.

And spare glasses if you need them for driving/riding, that comes up in quite a few countries.

Warning triangles not necessary on bikes.

Headlights on all the time is required in most european country's as well.

Check your dates on E111 cards, they don't last very long, mine runs out this year, only seems like a year since I got it.

Puncture kit is a good investment.

And make sure your holiday insurance does cover you on a bike, your looking for a statement like 'you are covered for any vehicle you haved a licence for' and that your breakdown cover does actually cover you (just found out my last 6 trips weren't covered)

Europe

all docs to bike / hi vis / bulb kit / I always take first aid kit small / and if going through certain tunnels in Austria buy a vinetta toll pass at any service station 4.80 euros fine for not having said forth pass 100+ euros its a ten day pass. needed for the Landdecker tunnel 193 rechpass route and others. not forgetting spare keyfob for alarm /immob. happy times

As JB says, take a first aid kit if you can, in France you are obliged to stop and assist any incident, firstly putting your hi viz on though.
The vignette for austria isn't to bad, but watch switzerland, if you intend using their motorways it's the full car vignete you have to buy, and thats 40+ odd euro's !! So either go round or stick to the side roads and mountain passes, but you'll need to allow stacks more time to cover the same distance.
