Just planning a trip for next year but not sure how to approach it. Been abroad travelling plenty of times before but not Spain. Easy to find overnight accomodation in most places without booking anything in advance but I'm not so sure about Spain.

How easy is it to tourl and just find a place to stay along the route each night ? Or is this difficult and would a base location be better and ride out from there each day ?

Done it both ways elsewhere but really not sure for Spain.

Any wise experienced Spanish tourers advice would be appreciated.

In my experience finding accommodation in spain is pretty much like France..lots of hotels of varying standards. Obviously availability alters depending on the season..busiest months tend to be july and august surprise surprise. I can't speak for the whole of Spain but I know catalonia..we have a place out there.
plenty of excellent biking roads in the Pyrenees also great run from Pals up to Collioure in France taking the back roads through Colera - we stopped there for bacon butties!! .... good mixture of twisties and more gently curving roads just wish i had been on my bird and not the hired GS1200. Collioure is a gem one of the the prettiest places I have bene to in france and no shortage of decent places to eat.....Tamariu near palafrugell on the Costa Brava is a great place to stay ..try the Hotel Tamariu which is right on the beach. if your idea of Spain is high rise resorts like Benidorm then you are in for a nice surprise here..low rise, low key, low crime and like France the Spanish respect bikers. just watch out for the cops speed limits have been reduced to 66mph on motorways and locals are convinced its nothing to do with fuel saving (Gov excuse) or safety but just another way of scooping cash into the country's coffers....have a great trip
