If I remember correctly, mandatory are :

Drivers' Licence (both parts)*
Certificate of Insurance
Registration Document (V5)

*Some European countries also require an International Driving Permit (IDP). Especially if you have the older "paper only" licence. Individual country requirements can be found here :

http://www.theaa.com/motoring_advice/overseas/idp-requirements-by-country.html

Then there's the standard travel stuff :

Passport
Travel Insurance
European Health Insurance Card (EHIC)

If you have European breakdown cover, I would suggest you carry the membership documents

Come on you Hatters
and MOT.

And you must have hi viz vest/jacket for you and pillion
and Spare bulbs and First aid kit.

and puncture kit is good idea.

And make sure the insurance and breakdown covers abroad, and tell them you're going before you leave.

But wasn't the question pertaining to documents ?

Carrying your MOT certificate in Europe is logical, but apparently not mandatory

Hi-Viz vests, first-aid kit and spare bulbs apply to France, but not sure about the rest of Europe

According to my insurers, you do not have to notify them when travelling abroad, as cover is automatic in most member states of the EU

If your touring on a bike, Hi viz vests, first aid kits and spare bulbs are not obligatry in France, dont forget to carry ?90.00 in cash with you for "on the spot fines", if you dont have it on you the flick will escort you to a cash machine.

Wobblemonster is correct, reguarding vests spare bulbs ect. Nothing to do with documents, if you intend to do a lot of night riding might be a good idea to spend a few minuets adjusting headlights. Just a thought.
