Just done some jacket spuds, they were in the oven for 1h 45m at a high temp, took them out & the skins were soft as though they were microwaved, jacket spuds should have hard crispy skins, it’s the law.

Time to investigate the temp the oven ACTUALLY is I think

My microwave gives crispy skins and soft insides with its upper and lower grills.

Shame you don't know a professional chef, that you could get advice from.
